Colussi have been baking biscuits in Venice since 1791!

 

Baicoli are their traditional Venetian biscuit, originally created as a ship's biscuit, for long voyages as they maintain their consistency for a long duration, when properly stored in their tin.  Simple with a delicate taste and charcterised by a crunchy structure, they go well with a morning coffee or later in the day can be dipped in zabaglione cream.

 

The name Baicoli derives from the Venetian dialect and means 'small fish'. Their distinctive tins have become a collectible item for many over the years.
